-4 zucchini sliced in round pieces -4 eggs -Oil for frying -Salt -Pepper
Fry the zucchini in a ffrying pan with some oil until they get brown and soft
In a bowl beat the four eggs until they become 'fluffy'
Remove almost all the oil from the pan and add our eggs, salt, pepper
Mix constantly until the eggs are cooked
Tomatoes with Eggs (strapatsada)
Delicious appetizer
-4 large tomatoes -4 eggs -Oil for frying -Salt -Pepper
Peel the tomatoes and chop them into small pieces
Place them in a frying pan with a little oil and cook them for 10-15 minutes (until there are no liquids)
In a bowl beat the eggs until they get 'fluffy'
Add the eggs in the tomatoes
Mix constantly until the mixture thickens (less than 5 minutes)
Tips: An easy way to peel tomatoes is to put them into boiling water for about 20-30 seconds
Pourgouri (groats, oatmeal)
Side dish or light main meal. Kinds favorite dish
-2 Cups groats (oatmeal) -½ cup vermicelli -4¼ cups water -1 Cup tomato puree (or crushed tomatoes) -1 Onion chopped -pepper -salt -½ small cup(espesso style) of olive oil -1 Vegetable broth
Put olive oil on a frying pan and put it on the fire
After it is heated up place the vermicelli and roast it until it turns into golden brown
Put the chopped onion and fry it until it gets golden brown
Add the tomato juice, allow it to get boiled and fill all the water, the broth, the tomato puree, salt and pepper.
Then let them mix and cook for 10 minutes
Put our Pourgouri (groats, oatmeal)
Stir very regularly until the oatmeal reduces all the water
Remove from the heat and leave it for 5 minutes to rest
Tips: After putting the oatmeal you should turn down the heat and stir very often because it might stick to the bottom and get burned. Perfectly combined with yogurt.
Remove the stalks from the purslane and leave only the leaves and tender tops.
Cut the tomato in pieces.
Place all of our ingredients in a bowl and mix well
Sandwich with halloumi cheese and lountza
Classic Cypriot snack for all hours
-2 slices of bread (preferably traditional 'village' bread) -3 slices of lountza (smoked pork) -3 slices of halloumi cheese -2 slices of tomato sliced into rings -Margarine (butter)
Spread two slices of bread with margarine
On one slice of bread, place the lountza, halloumi and tomato
Close the sandwich with our other slice of bread
Tips: Our sandwich becomes more tasty if cooked in a toaster for 5 minutes leaving the halloumi cheese to melt. As an herb you can use oregano for stronger taste.
Talatouri (tzatziki)
Cyprus fine appetizer
-2 cucumbers -250 gr yoghurt -2 Cloves garlic crushed (or chopped) -Olive oil (about 4 tablespoons) -Salt -dry mint
Cut the cucumbers into small cubes and let them drain for 5 minutes
Put all our ingredients in a bowl and mix well.Enjoy!
Tahini
Ideal starter. Dip that can accompany bread very well
-250 gr tahini(you can find it in super markets) -¾ cup water -½ cup juice lemoni -3 cloves garlic (minced) -¼ cup of olive oil -salt
In a bowl, beat the tahini with the water and lemon (very well until our tahini gets white)
Add garlic and continue stirring
Add olive oil and salt
Tips: If you need, supplement with a little more water and lemon. Serve with a little chopped parsley
Cypriot village salad
Perfect salad for most main dishes in the Cypriot cuisine
-5 or 6 lettuce leaves -200 gr cabbage -2 tomatoes cut into thin slices -2 Cucumbers cut into thin slices -100 Grams of chopped cilantro -1 Onion, cut into thin slices -1 Green pepper, cut into thin slices -200 gr feta cheese cubes -Olives -Olive -Vinegar -Salt

Tips: Set the olive oil, vinegar and salt accordingly. Pleasantly accompanies many main dishes (like grilled courses). You can enrich the smell by adding other herbs such as mint or oregano.
